1 Red kuri squash Hokkaido pumpkin
2 pieces of Chicken quarters
1 Onion Medium
1 Carrot
½ cup of Rice I took Camolino
2 cloves of Garlic
Salt and pepper
Olive (sunflower) oil to oil the pumpkin

Pumpkin is one of the most favorite vegetables for me. It is really good for cooking various healthy and low-calorie meals. Besides, it is good for cooking both main courses and desserts. Especially in the pumpkin season, which is officially open now.

Remove the bones from the chicken quarters, cut the meat into small pieces and fry it slightly on a well-heated frying pan.

Add chopped onion and carrot to the chicken and simmer for another five minutes on medium heat. Stir it occasionally.

Rinse the rice three or four times and add it to chicken and vegetables. Stir well and cook about five more minutes to let rice to absorb chicken and vegetables flavor. At the end of cooking add salt (I took 1 tsp) and pepper to taste.

Now prepare our pumpkin. Cut away the tip on the base so the pumpkin not rolls on its side. Then cut off the top carefully and remove the seeds. We need only solid part of the pumpkin. Rinse it well and dry with a paper towel.

Fill the pumpkin with rice and chicken and add some water to cover the filling. Put two lightly crushed cloves of garlic on the top and oil the sides of the pumpkin with olive oil.

Preheat the oven to 370F, cover the squash with foil and bake it for 1.5 hours. Remove garlic before serving.
